The Humble Leafy Green: 5 Reasons Why Saag is Nepal’s Superfood

October 21, 2025

Here in Nepal, we’re blessed with an abundance of fresh, leafy greens, locally known as Saag. From the ubiquitous Paalungo (Spinach) to the peppery Rayoko Saag (Mustard Greens) and beyond, these humble greens are a staple in our diets.

But often, we see them as just a simple side dish. What if we told you that the saag on your plate is one of the most powerful superfoods you can eat?

At Tiun Tarkari, we deliver fresh saag straight from the farm because we believe in their power to build health. Let’s break down why you should make these greens a daily priority.

1. A Powerhouse of Vitamins and Minerals

Saag is densely packed with essential nutrients. It’s an excellent source of:

  • Vitamin A: Crucial for good vision, a healthy immune system, and glowing skin.
  • Vitamin C: A powerful antioxidant that boosts immunity and helps your body absorb iron.
  • Vitamin K: Essential for blood clotting and bone health.
  • Folate: Vital for cell growth and function, making it especially important for pregnant women.

2. Strengthens Your Bones

Forget just drinking milk! The combination of Vitamin K, calcium, and magnesium found in leafy greens like Lahare Saag (Amaranth) works synergistically to build and maintain strong, healthy bones, helping to prevent osteoporosis later in life.

3. Boosts Your Energy Levels

Feeling sluggish? The high iron content in saag helps in the formation of hemoglobin, which carries oxygen throughout your body. More oxygen means more energy. Pair your saag with a squeeze of lemon (Vitamin C) to enhance iron absorption!

4. Supports a Healthy Digestive System

Packed with dietary fiber, saag helps regulate your digestive system, preventing constipation and promoting a healthy gut microbiome. A happy gut is linked to improved mood, immunity, and overall health.

5. An Antioxidant-Rich Shield

Our bodies are constantly fighting damage from free radicals. The antioxidants in greens like Chamsur (Watercress) and Methi (Fenugreek Leaves) act as a shield, reducing inflammation and lowering the risk of chronic diseases.

Bringing the Benefits Home: A Simple, Delicious Saag Recipe

Knowing the benefits is one thing; enjoying them is another. Here’s a classic, easy-to-make recipe for Sadeko Saag that lets the fresh flavor shine.

Ingredients:

  • 1 large bunch of fresh Paalungo or Rayoko Saag (from Tiun Tarkari, of course!)
  • 2 cloves garlic, minced
  • 1-2 fresh green chilies, finely chopped
  • 1 medium tomato, chopped
  • 1 tbsp mustard oil (or any cooking oil)
  • Salt to taste
  • A squeeze of fresh lemon juice
  • Fresh coriander for garnish

Instructions:

  1. Wash & Steam: Thoroughly wash the saag. Chop it roughly and steam it for 5-7 minutes until wilted but still bright green. Let it cool.
  2. Sauté Aromatics: Heat the oil in a pan. Sauté the garlic and green chilies until fragrant.
  3. Combine: Add the chopped tomato and cook until soft. Then, add the steamed saag and salt. Sauté for another 2-3 minutes, mixing everything well.
  4. Temper & Serve: Turn off the heat. Drizzle with a squeeze of lemon juice and garnish with fresh coriander. Serve as a perfect side with dal bhat!

The Tiun Tarkari Difference: Farm-Freshness for Maximum Nutrition

The nutritional value of saag starts to decline the moment it’s harvested. That’s why freshness isn’t just about taste—it’s about health.

When you order Leafy Greens from Tiun Tarkari, you’re getting saag that was recently picked from our partner farms, not something that has spent days in transit and storage. We ensure you get the most nutrients and flavor, delivered directly to your kitchen.
